The roller mill machine is the most important equipment in a modern flour milling system, designed for the gradual reduction of wheat into flour. It operates using pairs of cylindrical rolls that rotate in opposite directions at different speeds. This differential speed creates shear and compression forces that break the wheat kernel efficiently. The milling process is carried out in multiple stages, including break rolls (to open the grain) and reduction rolls (to produce fine flour). Corrugated rolls are used in initial stages to tear apart the kernel, while smooth rolls refine the flour. The machine allows precise control over particle size and ensures minimal damage to starch.
